As some of you know, R is on the Adkins diet. Or as we like to say, he lives a “low carb lifestyle”.I feel like sometimes we get in a rut. Same thing, every night. Anyhow, sometimes finding new recipes can be really tough. Like, super tough! No rice. No bread. No potatoes. No stuffing. No flour. No sugar. No pasta. DO YOU KNOW HOW HARD THAT IS????? Now, since R has been doing this for 2 years, I’ve made adjustment. I’ve learned how to substitute some things in place of other things (treat cauliflower like potatoes or find special bread at Trader Joe’s). My saving grace has been Dreamfields Pasta. They make linguine, spaghetti, rigatoni, lasagna. It’s been wonderful. With this is mind, I found this recipe!
Lasagna Roll Ups
- Dreamfields Pasta Lasagna Noodles
- Any kind of meat you want (I used a lb of ground turkey)
- Can of tomato sauce
- Small container of ricotta cheese
- Bag of mozzarella cheese
- Muffin tins
I cooked the ground turkey down until it was browned. Then I added my sauce to desired taste (salt, pepper, oregano, garlic salt was added). I boiled the noodles until they got al dente. Then I wrapped them in the muffin tin (one noodle per cup). Then I put some ricotta cheese at the bottle of the cup. Some sauce with meat went on top. Then I topped them off with some cheese.
I put them in a 350 degree oven for 25 minutes or until the tops browned.
They were really good! R liked the crunchy parts on the noodles and they turned out super cheesy. I will def have to make them again!
